I went rogue and threw the sandwich fixings into a casserole dish and baked it to golden deliciousness!
I was tight on time, so store-bought bread and sauce came to the rescue.
Trust me, it was worth it! It’s a quirky way to make a sandwich, but so fun and delicious!

Beef Tacos
Get this. I was feeling ambitious and decided to make some homemade flour tortillas. Let me tell you, it was totally worth it. Nothing compares to the deliciousness it brings to the meal.
And I’m not done yet. When I came home from work, I threw a pound of dry pinto beans into my pressure cooker along with some seasoning. Guess what? Just 45 minutes later, I mashed them up with a stick blender and VOILA! We had homemade refried beans to enjoy too!
Epic eats right there. When was the last time you used your pressure cooker (Instant Pot)? Pull that thing out and make it work for you.

BBQ Pulled Pork, Baked Sweet Potato & Squash w/ Onions.
This meal was a breeze! I reached into the freezer and grabbed 2 pounds of the delicious BBQ pork that I prepared several weeks ago and threw it in a casserole dish with some sauce. Popped it in the oven and done!
I baked some sweet potatoes and added a side of yellow squash picked fresh from the garden with onion.
The whole crew devoured it.
My favorite thing about it? I barely lifted a finger in the kitchen. Love when the kitchen doesn’t tie me down.
