BBQ Salmon w/ Buttered Noodles & Salad
I quick pan fried the salmon and then put BBQ sauce on it. Not so fancy but it was delicious.
The egg noodles are just tossed with some butter, a little milk to smooth it out and some chopped parsley from the Victory garden.
Side salad with lettuce from the Victory Garden and homemade Blue Cheese dressing.
Shrimp Fried Rice
It’s easiest to toss cooked rice onto a baking sheet, season it then bake it instead of “fry” it in a skillet. Then I just toss the veggies and meat onto the top and let the family spoon it right off the tray.
Here, we’re using our sugar snaps from the Victory Garden and our LIGHT Farms eggs.
Simple Chicken Salad
For Saturday’s lunch, I sous vided a few chicken breasts chopped, and tossed them with some seasoning celery from the Victory Garden, red onion and mayo. It was served on sandwiches with a loaf of bread I had baked in my bread maker, and lettuce from the garden too.
Steak w/ Squash Casserole
I had marinated the LIGHT Farms NY Strip Steaks then cooked them for several hours in the sous vide, seared them off, and made a quick squash casserole (yes, I used an entire container of our homemade croutons from SC Real Foods on top) and some honey wheat rolls (no photo).
