Tuesday – Out to eat in Florence
Wednesday – Zucchini Lasagna, Garlic Bread
Thursday – French Toast & Bacon
Friday – Vegetable Beef Soup, Garlic Cheese Drop Biscuits Chili w/ Beans & Chips
Saturday – Steak, Baked Potatoes, Seasonal Veg.
Sunday – You’re on your own & leftovers

Crispy Baked Chicken, Crispy Smashed Potatoes & Squash Puff

These crispy potatoes are simply irresistible to my family! First, boil baby potatoes, then smash them down onto a baking sheet. Drizzle olive oil on top, sprinkle with flaked kosher salt, and roast until they’re perfectly crispy. Trust me, your taste buds will thank you!

Get creative when the garden starts overflowing with squash. My favorite creation is something I call Squash Puff, a soufflé-like dish. Lightly cooked yellow squash is mashed and blended with egg and shredded cheese. After baking in a casserole dish, it gets topped with breadcrumbs. It’s a delicious, easy way to enjoy all that excess squash.

French Toast & Bacon

I had to use up a stale bread loaf made in my breadmaker several days ago for my French Toast, so I turned to my go-to recipe from Natasha’s Kitchen. Mine is finished with butter and homemade Quick Tart Strawberry Jam.

I served the dish with Cheshire Pork Bacon (which you can find at SC Real Foods) and fresh strawberries hailing from the Victory Garden.

Everyone enjoys breakfast for dinner.

Chili w/ Beans & Chips

Variety in every bite is the name of the game here. I love my chili all dressed up with layers of cheese, crunchy bell peppers, a bit of salsa, sour cream and fresh cilantro.

In the chili, there’s plenty of variety too with 3 kinds of beans plus corn!

LIGHT Farms Filet Steak w/ Chimichurri & Mushrooms

Chimichurri has me completely enraptured. Once I’ve pulled the garlic and herbs from my garden, it’s game on. This sauce stays in my fridge all summer, ready to transform any dish that needs a kick. The ultimate of course, is over our own grass-fed filet steak.

With fresh garlic in my hand, I went overboard – garlicky mushrooms, roasted garlic mashed potatoes, paired with an effortless salad w/ homemade Ranch for an outstanding feast.
