Thursday’s Breakfast Casserole ended up being a frittata.
I started by browning 1lb of our Colfax Creek breakfast sausage, crumbled. After removing from the heat, I tossed on our own garden spinach which was steamed and drained along with cubes of jack cheese. I poured beaten eggs over the top and put the entire pan into the oven to back.
I put our some orange wedges and it turned out to be a quick, nutritious, one pan complete meal.
For Friday’s pizza, as soon as I woke, I made the dough in my bread maker and then set it in the fridge so it was ready for me when I got home.
